Sweet Treat From Cardigan

The Cardigan Cookie
 

In 2013, Cardigan asked the community to submit their favorite recipes to be considered for the institution of an official “Cardigan Cookie.” The cookies were taste-tested by students and faculty. The winning recipe came from Colton Bullard ’15 and is served during special occasions on campus. Now you too can enjoy Cardigan from your very own kitchen!

Ingredients

3 cups all-purpose flour 
¾ teaspoon baking soda 
Pinch of salt 
¾ cup soft unsalted butter 
1 ½ cups brown sugar 
¾ cup granulated sugar 
1 ½ tablespoon vanilla extract 
2 large eggs
2 egg yolks 
1 ½ cups Heath Bar (chocolate-covered toffee) crumbs 
2 cups chocolate chips

Directions

Combine baking soda, salt, and flour in a bowl and set aside. Cream butter with the sugars until smooth and creamy (do not overbeat). Add the yolks and eggs slowly until combined. Add vanilla extract. Add the dry ingredients half at a time until combined (again, do not overbeat).

Fold in the Heath Bar crumbs and the chocolate chips. Scoop into balls about 1 ½ inch round and place on a cookie pan with parchment paper two inches apart. Bake at 325° for 12-14 minutes. Let cookies rest for five minutes and then remove from the cookie pan onto a cooling rack to cool the rest of the way.
